It's one of those dishes I never make the same way twice. I tend to google and read different recipies and take the bits and pieces I like from a few, depending on mood.

Sometimes I might do a middle eastern inspired one with Lebanese aggplant, or a greek style one or an Irish Stew style.

While I'm at it, I can't recommend enough introducing Kampot pepper into your dishes.
I brought a fair bit back post a pre-Covid Cambodian trip.
White Kampot is amazing on eggs any way you do them. I throw a liberal dose into my soups.

It needs to be part of your culinary lives.

I'm going to get some Osso Bucco into the slow cooker and Chilli Con Carne into the electric frypan today.
Anyone have any signature additions to theirs worth considering?

When I have the time and inclination, I make Texas Red in the cast iron camp oven on the gas stove.

Chuck or gravy steak instead of mince and instead of tomatoes, roast some red capsicum and other peppers, blister the skin and peel it off, then chuck them in the blender for the sauce. Yum. No beans in Texas Red.

Back in Melbourne after a couple of days in Toc, felt like Lambs Fry so went shopping. 2 supermarkets and 1 butcher, no luck. The first butcher was sold out but the second had some in the freezer so grabbed them, but also picked up some Osso Bucco on special, so thats dinner tonight.

Going to Toc for a couple of days, doing a big cook so Mum has tucker for 3 days, apart from the freezer full of home cooked meals.

Doing braised steak and onions with mash and veges.

6 oyster blade steaks, seared for 1 minute on high heat, put aside.

3 sliced brown onions, tossed on a medium heat with olive oil and butter until soft and just brown.

tip in 750ml of water and a packet of french onion soup mix, stir, then put the steaks back in and simmer for 3-4 hours on low heat.

Serve with mashed spuds and pumpkin and steamed peas, carrot, zucchini, broccoli and cauliflower.

6 serves at around $6 per serve.

Bastille Day so cooked chicken cassoulet and had it with a bottle of Bigibila Cabernet franc (red from the Pyrenees region of Vic).

That sounds absolutely delicious! Slow-cooked lamb shanks are such a comforting dish, especially with that rich tomato and red wine sauce. The mash and steamed veggies will complement it perfectly. Are you adding any herbs or spices to the sauce?

So I was supposed to be going to lunch with the family today for Fathers Day. Daughter had booked a steak joint in Fitzroy, $100 per person set menu, her shout.

Figured I wouldn't need dinner tonight, so planned on cheese and biscuits, til I got a text yesterday to say the grandson has a bug and is vomiting non stop, so lunch is cancelled, to be held another day.

OK, no issues cancelling from me, I want the Grandson there in good health. So WTF do I do for dinner now?

Pulled a lambs liver out of the freezer to thaw in the fridge overnight.

Tonights fathers day dinner, prepared by Moi, is lambs fry with bacon and onion, in red wine sauce, mashed spuds with sweet potato, diced onion and garlic butter mixed through and peas.

Mum gave me a box of chocolates, so I bought a bottle of Baily's to help wash them down.

Mulberry tree is heavy with fruit. Reminisced from when I was a lad and my dog (Woody) and I would lay underneath and eat the ripe berries that had fallen to the ground.
Decided to take a leaf out of my late Aunt's book and make some Mulberry jam.
Neighbours have asked for more so can't have been that bad.

My Mulberry trees don't even have leaves yet, let alone fruit.

I'm looking forward to getting some fruit and making some spicy Mulberry sauce.
